Made with simple ingredients like courgettes, cherry tomatoes, baby spinach, and a block of feta, it all comes together in one tray for minimal mess and maximum flavor. Preheat a fan oven to 200°C.
Wash and chop the vegetables, cherry tomatoes in half and cut the courgettes into small cubes.
Layer an oven tray with the veggies in rows.
Place the block of feta in the center of the tray.
Drizzle the olive oil over the vegetables and feta.
Season with salt and pepper.
Bake for 15 minutes whilst you cook the macaroni.
Remove the tray from the oven and mash the veggies together with the baked feta.
Add the cooked macaroni and mix everything well together.
Serve warm with a sprinkle of chilli flakes.
