Sautéed with fresh ginger, garlic, and onion, then simmered in luxurious coconut cream, every bite is silky, spiced, and satisfying.

Cut the tofu in medium sized cubes.
Meanwhile roughly chop red pepper and onion, then mince together with garlic and ginger in a chopper.
Mix all masala paste ingredients in a bowl, whisking it to blend the spices.
Heat oil in a pan, sauté the minced veggies and courgette cubes for 1-2 minutes.
Add the masala paste and saute for 1 min then add the tofu and coat well with the masala and vegetable mixture.
Pour in coconut cream, mix and let it simmer for a few more minutes.
Serve with rice and garnish with chopped coriander.
