These 15min Protein Egg Wrap Cups are the perfect high-protein lunchbox idea, snack on the go, or quick breakfast. They’re crispy on the outside, fluffy inside, packed with veggies and ready in just 15 minutes using the air fryer or oven.
This recipe is inspired by the viral effortless 15min Protein Wrap Cups, but made even easier and perfect for busy families.

Pre-heat the oven 180C if using the oven.
Layer 3 tortilla wraps on top of each other and roll them up together.
In a cupcake tray, stand the tortilla roll up into the mould and snip the tortillas with scissors to create mini wrap cups. Shape them out with your fingers to create an enclosure in the centre.
Whisk all your ingredients and half the cheese and fill the wrap cups 3/4 full.
Top up with more cheese and sprinkle some herbs.
Air fry for 12min 180C or bake in the oven for about 18min or until brown and egg filling cooked.
Let cool on a cooling rack before packing into the lunchbox so they stay crispy.
