Almond-Choco-Orange-Date Energy Balls

I love chocolate as do my children and funny enough they seem to prefer the bitter dark chocolate over milk chocolate as they now find the latter too sweet. Children follow by example and seeing mommy indulging in the bitter version of this divine naughtiness makes it all that more appealing to them. Exposing your children to different flavours enhances their taste buds and these energy balls are perfect – not too sweet, not too bitter. No refined sugar in this recipe and its gluten free and lactose free.

 

Makes: about 25 balls circa 3cm in size

Time: 15mins (of course!!!)

Type: Vegan, GF, DF, SF

  • 150gr medjool pitted dates (high in essential minerals and vitamins)
  • 150gr ground almonds (antioxidant properties, Vitamin E, protein)
  • 60gr desiccated coconut
  • 3 heaved tbsp of organic raw cocoa powder (Sugar free)
  • 2 tbsp chia seeds (omega 3, fibre, protein)
  • 2 tbsp maple syrup or agave nectar (optional)
  • 2 tbsp melted organic virgin coconut oil (healthy fat)
  • Juice of a medium sized orange
  • Zest of a medium sized orange
  1. Soak the Medjool Dates in hot water for 5mins whilst you prepare your other ingredients
  2. Place the almonds in a Nutribullet (using the solid’s blade) or a food processor – put some aside (about 1/4 cup) to roll your energy balls in
  3. Add all the other ingredients to the almonds apart from the chia seeds
  4. Add the dates keeping the water used for soaking
  5. Process or Nutribullet to a smooth consistence – add a little date water if needed
  6. Transfer mixture to a bowl and add the chia seeds
  7. Spread some coconut oil on your hands to help roll little energy balls coating them in ground almond (you can even coat them in coconut flakes or cocoa powder)
  8. Place in the fridge and enjoy when the craving hits!
