Beetroot Hummus

A perfect dip for your pre-dinner crudités, as a spread on your morning toast, or with my devilled eggs. This Beetroot Hummus is a good example of one of the best high protein vegan snacks. With this delicious dip, you can enjoy your snacks in a healthy manner!

This super quick and simple recipe is great for last minute snack preparation, or those days when you simply don’t have enough time. In only two steps, your beetroot hummus is ready – just blitz all your ingredients in a NutriBullet and add your garnishes on top.

Serving Suggestions

You can enjoy my beetroot hummus in all sorts of snacks, sides and breakfasts. You can serve it as a dip with your crudités (I served mine with sliced cucumbers, red and yellow peppers, broccoli, celery, green beans and baby corn) or as a spread on your morning toast for a protein packed breakfeast. You can also enjoy it with devilled eggs to add a tasty beetroot kick to your breakfast.

Ingredients
 380 g carton of organic chickpeasfrom Mr Organic
 1 vacuum pack of organic cooked beetroot (250 g)from Waitrose
 2 heaved tbsp of Meridian Foods Tahini
 1 tsp Himalayan salt
 2 tsp coriander & cumin powder
 1 tsp chopped garlic
 1 lemon juiced
 100 ml extra virgin olive oil
 green chillies and coriander (cilantro) if you like

Method

Blitz all the above in a food processor or NutriBullet

Add chopped chillies and chopped coriander over the top then mix.
