Delicious and quick beetroot waffles that only take 15 mins. Beetroot always adds a lovely colour to food and is a great source of folic acid, fibre and potassium (to name a few!) – a beautiful and healthy breakfast.
These waffles are made with oat flour so they’re completely gluten free. They are also made with my easy-to-make homemade almond milk and a chia egg (which is 1 tbsp chia seeds soaked in 3 tbsp water) to eliminate the need for dairy milk and eggs and to ensure these beetroot waffles are vegan friendly.
If you’re looking to make a whole rainbow of waffles, you can adapt this recipe to change the colour of your waffles. For example, if you want to make them green, just add spinach instead of beets. If you want your waffled to be orange, simply use boiled sweet potatoes instead. If you love chocolate add cocoa powder.
