Broccoli Crust Pizza

Packed with veggies, gluten-free, keto friendly and low carb, this broccoli crust pizza ticks all the boxes for a delicious and healthy meal. Ready in just 15 minutes, this super quick pizza offers a healthy (and speedy!) alternative to regular dough pizza.

This recipe is similar to my Cauliflower Base Pizza but even simpler! I bypassed the microwaving and water straining process and went straight to cooking the base in the oven on high heat. I think the protein cheese from Eatlean I used made this broccoli crust pizza cook to perfection.

You can also make this pizza recipe vegan friendly by replacing your eggs with a chia-egg which consists of 1 tbsp chia seeds pre-soaked in 3 tbsp water and skipping on the Parmesan and protein cheese and using nutritional yeast or vegan cheese instead.

Ingredients
For the Base... (Two 32cm pizzas)
 3 medium sized organic broccoli
 1 packet grated Eatlean protein cheese (go vegan by adding nutritional yeast or vegan cheese)
 ½ cup Parmesan
 3 chopped green chillies (optional but makes it super delicious)
 1 tsp black pepper
 3 eggs (from Clarence Court Eggs). To make it vegan, use a chia-egg instead which consists of 1 tbsp chia seeds pre-soaked in 3 tbsp water
Pizza Sauce
 1 tin organic chopped tomatoes (from Mr Organic)
 2 tbsp olive oil
 1 tsp chopped garlic
 3 tbsp chopped red onions
 handful fresh basil
 ½ tsp Himalayan salt
 ½ tsp black pepper

Method
For the Base...

Mince the broccoli in a food processor

Add all the other ingredients and mix

Form pizza base using your hands, pressing down and shaping the round base. Use baking paper to best absorb the water

Cook base in a pre-heated oven at 250C whilst you prepare the pizza sauce and toppings

Sauté the garlic and onions in olive oil

Add the chopped tomatoes

Add chopped basil leaves and seasoning

My toppings were: laminated mushrooms, laminated courgette, red peppers, sweetcorn, jalapeño peppers and more protein cheese
