Cauliflower Base Pizza

For a healthier low carb pizza option, you can’t go wrong with this gluten free Cauliflower Base Pizza that’s great for the whole family. To make it vegan simply use corn flour, oat flour or even whole oats instead of egg and use vegan cheese (or no cheese at all!) instead of grated dairy cheese.If you leave out the cheese altogether, it will still taste like pizza because of the delicious pizza tomato sauce.

For a truly authentic taste to your cauliflower base pizza, this recipe makes the tomato sauce from scratch. Using chopped tomatoes, tomato passata, garlic, chopped basil and spices of your choice, you can really make this sauce your own and modify it to suit your tastes.

Ingredients
 1 cauliflower
 1 large eggyou can substitute the egg for 1-2 tbsp corn flour, oat flour or even whole oats
 1 cup grated cheese (mozzarella or cheddar)you can use vegan cheese or no cheese at all
 oregano, basil, black pepper and garlic all to taste
For the Sauce
 ½ tin chopped tomatoes (200g)
 2 tbsp tomato passata
 ½ tsp garlic
 1 tbsp chopped basil
 spices of your choice

Method
1

Grind a cauliflower in a food processor (should make 4 cups roughly)

Cook it in the microwave for 8mins

Preheat oven 240C

Strain excess water then to the cooked cauliflower add your egg (or substitute), grated cheese, oregano, basil, black pepper and garlic all to taste

Shape out the cauliflower dough using your palms and fingers and lay out on a baking paper or on a pre-greased pizza tray or oven tray

Place in the oven on grill (about 7mins). The edges will brown quicker which is fine

Make pizza sauce with tomato passata, adding garlic, basil and spices

Spread over cauliflower pizza base

Add your toppings

Eat hot or store in fridge for next day!
