Cauliflower Crust Rainbow Pizza

This vibrant Cauliflower Crust Rainbow pizza is a great low carb pizza option. Simple to make and delicious to eat, top your cauliflower crust with colourful veggies to make a healthy and vibrant meal.
Pizza topping is a great activity to get the kids involved with. You can create all sorts of fun and exciting patterns and shapes to make your pizzas look as beautiful as possible! I used multi-coloured vegetables including red, yellow and green peppers to create a tasty topping that is both colourful and healthy. My cauliflower crust was made using cauliflower rice from FullGreen.
To increase time efficiency in the kitchen, chop up your colourful veggie toppings whilst your cauliflower base cooks on the grill. This way, once your pizza base is out of the oven, all your toppings are ready to be sprinkled on top!

Preheat oven to 250C - the hotter the better
Mix all the ingredients well in a mixing bowl
Place a sheet of baking paper on an oven tray
Empty your mixing bowl contents into the centre of your baking tray
Pat down using your hands to flatten and form the round base - the thinner the better
Press down some kitchen roll to soak up the excess water - you may need 4-6 sheets
Switch oven to high grill and place tray with cauliflower base in the grill for 5mins
Whilst the cauliflower base cooks, chop up your toppings
Remove the cooked base when you see it brown and crisp on the edges
Add your grated cheese first, then layer your toppings
Grill in the oven for a further 5mins
