Steam the drained chickpeas and pumpkin cubes for about 5 minutes to slightly soften them. This will make them easier to blend.
In a food processor, mince the parsley and onion together first until finely chopped.
Add the steamed chickpeas, pumpkin,100g of oats, mustard, cumin powder, paprika powder, soy sauce, agave, and Himalayan salt and blend everything well into a smooth mixture.
Add the remaining 50g of oats and pulse the mixture just once to incorporate the oats. This will help give the patties a better texture.
Heat a griddle pan and lightly oil it with olive oil.
Form the mixture into patties (around 7 patties) and place them on the griddle.
Cook for a few minutes on each side, until they are golden brown and cooked through.
Serve the cooked patties on a burger bun, and add your preferred fillings such as lettuce, tomato, cheese, jalapeno sauce, perinaise sauce, and fried onion toppers.
