Chilli-Bean Mini Pittas

For a delicious, healthy and high protein vegan friendly snack, these Chilli-Bean Mini Pittas are perfect. Stuff your pitta breads, wraps, sandwiches or simply enjoy on its own, this easy chilli-bean filling is packed with goodness and a quick meal fix for those times when you’re short of time.

This recipe is full of veggies including red, green and yellow peppers, cherry tomatoes and sweetcorn, so you can enjoy a new favourite healthy snack. To make these Chilli-Bean Mini Pittas even more quick and easy, you can use ready cooked kidney beans as long as they don’t have nasty preservatives.

This kidney bean filling is a little hot from the chilli powder, so for the kids I used paprika instead of chilli and they just loved it!

Ingredients
 ½ red pepper
 ½ green pepper
 ½ yellow pepper
 5-6 cherry tomatoes
 1 tbsp olive oil
 1 tsp chopped garlic
  cup chopped white onions
 100 g cooked kidney beansyou can use ready cooked as long as they don't have nasty preservatives
 ½ cup sweetcorn
 1 tsp Himalayan salt
 1 tsp black pepper
 1 tsp chilli powder or paprika if you can't handle the heat
 handful chopped coriander
 8 mini pitta breads

Method
1

Dice your peppers & chop your tomatoes

Heat olive oil in a pan

Throw in the garlic & onions and sauté for 1 min

Meanwhile pre-heat your oven

To your pan, add your chopped peppers & tomatoes

Add your sweetcorn

Add your cooked kidney beans

Season with salt, pepper & chilli powder

Let cook for 2 mins

Sprinkle your coriander over the top and mix together

Heat the pitta bread in the oven for 2 mins

Once your pitta bread is done in the oven, make a cut along the side

Fill your pittas & serve!
