Chop the nuts together in a mini chopper
Pit your dates and roughly chop them with a knife
Heat 2 pans. I one add the ghee
Add your dates over the heated ghee and let cook
Add your roughly chopped nuts to the dry heated pan and dry roast your nuts
After a few minutes the dates will lump up together forming a mushy ball. This means your dates are able to bind together to form your log. You can turn off the heat here for both pans
Add your dates to your nuts and mix together with the help of a wooden spoon
Transfer to a chopping board and flatten out. This will allow the date & nut mixture cool down quicker
Sprinkle half your shredded coconut onto the dates and nuts
When cooled down enough and manageable, roll the mixture into a tight log. It doesn't have to be too thin just yet, you can reshape after removing from the fridge
Place your log onto some kitchen foil and sprinkle the rest of your coconut over the top rolling your log to catch all sided
Wrap in foil and plave in the fridge for at least 1 hour
Remove from fridge and roll out your log a litte more with the foil still on
Unwrap, Slice and enjoy. This indian energy sweet will last in the fridge for many weeks.

Thank you for sharing this recipe, it was really simple to follow and the most delicious mix I have tried. However, I think I boo booed on the amount of Ghee I used. My roll keeps crumbling when I try and cut it.
Either way… I’ve thoroughly enjoyed the end result… I’m going to try another batch now!
