Zucchini noodles in a delicious Alfredo sauce, this creamy, delicious and pasta-free Courgetti Alfredo is a dish that the whole family can enjoy. If you don’t like courgetti then you can simply make the sauce and use normal spaghetti or any pasta instead. The beauty of this alfredo sauce it is highly versatile (and easy to make!).
You can make your courgetti alfredo vegan and still retain its creaminess by using olive oil instead of butter, a plant-based cream instead of single cream and vegan cheese.
What is Courgetti?
Also referred to as zucchini noodles (or zoodles!), spiralized courgettes are an excellent low carb alternative to traditional spaghetti pasta. They retain all the goodness of courgettes whilst offering a pasta replacement. Courgetti are great to use if you’re on a time limit – they only take about 2 minutes to cook, which is another reason to love these low carb pasta substitutes.
