For ease, I’m substituting chia seeds, which are just as delicious and more readily available.
With Persian roots, falooda likely made its way to India during the Mughal dynasty, becoming a beloved dessert that perfectly combines texture and taste.

Make your jelly according to package instructions and let it set in the fridge overnight or for a few hours.
Soak the chia seeds in water and set aside.
Pour boiling water over the vermicelli, letting it cook and cool in the same water.
Mix 2 tbsp of rose syrup and vanilla extract to the chilled milk.
For layering your falooda, serve in tall glasses by first adding the jelly, followed by the chia seeds, flavored vermicelli, chilled milk, and finally topping with ice cream and nuts.
