A simple salad combining all the right ingredients to make a delicious combination of flavours. This fennel and avocado salad is a light and refreshing bowl of greens to freshen your day.
Fennel is often forgotten from the shopping list but its actually a fantastic veggie filled with vitamin C together with iron that drops in pregnancy for many women. Iron deficiency is also common amongst vegetarians and south Asians, so its important to find foods with a good amount of iron to incorporate into your diet. I’ve used fennel in a salad here, but it also works great in a smoothie! Click here to read more about the health benefits of fennel.
You can enjoy this fennel and avocado salad as a side or even as a filler meal if your looking for something healthier to fill in the gaps between mealtimes.
