Fennel & Avocado Salad

A simple salad combining all the right ingredients to make a delicious combination of flavours. This fennel and avocado salad is a light and refreshing bowl of greens to freshen your day.

Fennel is often forgotten from the shopping list but its actually a fantastic veggie filled with vitamin C together with iron that drops in pregnancy for many women. Iron deficiency is also common amongst vegetarians and south Asians, so its important to find foods with a good amount of iron to incorporate into your diet. Ingredients
 1 medium sized chopped fennel
 1 avocado
 1 cup cherry tomatoes
 ¼ cup chopped dill this marries beautifully with fennel
 1 lemon juice
 1 tbsp olive oil drizzle
 salt to taste

Chop the top end of the fennel bowl off and finely chop the bulb

Chop your dill

Cut the avocado into little cubes

4

Cut your cherry tomatoes into halves or quarters

Season with olive oil, lemon, salt & pepper

Serve or chill in the fridge for later. Pomegranate also goes beautifully with this salad if you can get your hands on some
