Frozen Yoghurt & Berry Cupcakes

Cool and refreshing frozen treats, these frozen yoghurt and berry cupcakes are a quick and simple healthy snack that are so easy, even the kids can make them.

These yoghurt cupcakes only require two ingredients – Greek Style Vanilla Yoghurt and frozen berries. Once you have these, you’re ready to go! You can even make frozen yoguhurt and berry ice lollies – simply use lolly/ice cream moulds rather than a cupcake tray.

Chocolate, Berry & Banana Smoothie Recipe Idea

These frozen yoghurt cupcakes are great to throw into a cold smoothie, berries and all. Make yourself some chocolate & berry banana smoothies by blending together:

  • 1 brown or soft banana
  • 2-3 frozen yoghurt & berry cupcakes
  • 1 tbsp cocoa powder
  • 1 cup preferred milk (I used coconut)
  • a few ice cubes

*makes 3 delicious cups

Ingredients
 1 pot Greek Style Vanilla Yoghurt (450 g)
 2 cups frozen berriesyou can also use any fruits, honey, granola or chocolate chips for your topping

Method
1

Fill a mini cupcake silicone tray with your Greek style vanilla yoghurt

Smooth down the yoghurt with your finger, to get a more even surface

Place your frozen berries or toppings of your choice on top

4

Freeze for a couple of hours

5

Pop out of the silicone tray and enjoy!

To Make Lollies...

Partially fill a small cup (or an ice cream/ice lolly mould) with yoghurt

7

Add 1 spoonful of berries (or preferred topping) then fill the rest of the cup with yoghurt

8

Insert lolly sticks or simply small spoons

9

Freeze

10

Release from cup (or mould) and enjoy!
