Summer refreshers just got a glow-up!
Slice up mini cucumbers, add fresh mint, your favorite G&T (we used @gordonsginuk), and a touch of sweetness like xylitol. Let the fizz settle before pouring into moulds then freeze, sip, and chill.
Tag your cocktail crew, this one’s a keeper!

Ingredients:
 2 mini cucumbers (thinly sliced)
 fresh mint leaves
 250 ml Gin & Tonic
 1 tbsp sweetener of choice (xylitol, stevia, erythritol or sugar)
 squeeze of lime juice (optional)

Method:

Prep the mix. In a jug, gently stir your G&T with the sweetener of choice until fully dissolved.

Let it sit for a few minutes to allow the fizz to reduce and help prevent bubbles in the lollies.

Assemble the moulds. Place sliced cucumber and mint leaves into your lolly moulds. Pack them in gently for a pretty, layered effect.

Slowly pour flat G&T mix into the moulds, covering the cucumber and mint.

Insert sticks and cover.

Freeze for at least 4–6 hours, or overnight.

Serve. Run moulds under warm water for a few seconds to release. Enjoy your boozy, botanical coolers!
