Prepare the Chai Sugar. In a small bowl, combine brown demerara sugar, cinnamon, cardamom, ginger powder, and nutmeg. Set aside.
Brew the Tea. Place the chai spice black tea bag into the hot water and steep for 5 minutes.
Stir in 2 tablespoons of the prepared chai sugar. Let stand for another 2–3 minutes.
Prepare the Glass. Dip the rim of your serving glass in orange juice, then into the chai sugar to coat.
Assemble the Drink. Once the tea has cooled slightly, pour it into the prepared glass.
Add Ice & Fizz. Drop in the ice cubes and top with ginger ale.
Garnish & Serve. Add cinnamon sticks and star anise for a fragrant finish. Serve immediately.
