Gosh! Spinach & Courgette Alfredo

A super simple recipe that won’t let you down: Gosh Spinach & Courgette Alfredo is delicious, filling, and quick; perfect for a healthy lunch or dinner.

Ever thought of swapping your noodles or spaghetti for Courgetti? It’s the perfect low-carb swap and such a healthy meal to have. Courgettes are also much quicker to cook (usually about 2 minutes!), so you can spend less time cooking and more time eating with this wonderfully quick 15 minute main meal.

With the addition of vegan spinach & pine nut bites by Gosh! and a creamy mushroom sauce, this Gosh Spinach & Courgette Alfredo is the perfect bowl of delicious goodness.

Ingredients
 2 medium courgettes
 2 tbsp butter
 1 tsp chopped garlic
 1 small red onion
 4-5 chestnut mushrooms
 280 ml single cream
 handful of basil leaves
 1 tsp salt
 100 g grated cheddar
 1 large jalapeño

Method
1

Dice the red onions and chop up the mushrooms and jalapeños into small bitesize pieces

Spiralize the courgettes into a bowl

Gently pan fry the red onion, mushrooms and jalapeños in butter

4

Add in a sprinkle of salt and the single cream

Pop in the Spinach & Pine Nut Bites and the courgetti and fry for 2-4 minutes

Top with grated cheddar and voila! Cheesy courgetti goodness in minutes!
