Delicious Gosh Vegan Sausage Salad Rolls made with my infallible Green-Nut Butter Sauce! A great salad snack that can be enjoyed on its own or with a dip, enjoy these spring rolls for any occasion.
To keep my spring rolls vegan and delicious, I used Gosh! vegan friendly sausages. They have a range of these on their site, so you can choose your favourite ones to make different flavoured rolls!
Making your Spring Rolls
When rolling up your rice paper to make your spring rolls it is important to add moisture to the paper. Place your rice paper wrapper in hot water and make sure to use double layers (so your roll is strong enough to hold everything without tearing). Wetting your wrappers ensures they can adhere to themselves, so you can close your wrappers safely and securely.

Chop up the iceberg lettuce
Grate the carrot into thin strips
Thinly slice the avocado
Chop the coriander finely
Mix together the green-nut sauce ingredients
Heat the Gosh! Veggie Sausages with a little oil in a frying pan for 3-4 minutes
Place some hot water in a deep dish and dip 2 rice paper wrappers, 1 at a time, for 5 seconds placing them one on top of the other like a double layer
Lay out a little lettuce, grated carrot and 2 avocado slices in rows at the centre of the soft wraps
Once the Gosh! Veggie Sausages have cooled down add one to each roll
Sprinkle with coriander
Add as much green-nut butter sauce as you like but no more than 1 tbsp so that it doesn’t ooze out of the wrap
Roll your wraps tightly taking one end over the filling, tuck in the sides then pack tightly with your hands as you roll
Serve with chilli dip or more green-nut
