Green-Nut Butter Sauce

If there’s any sauce you’d want in your fridge, it’s this delicious and highly versatile Green-Nut Butter Sauce! Healthy, with no added sugar or salt, high in protein and goes on everything, this sauce really does it all – and it takes a grand total of four minutes to make. It almost seems too good to be true!

Use this Green-Nut Butter Sauce:

  • as a dip
  • as a satay, marinade and sauce
  • inside your salad rolls
  • drizzled over grilled veggies
  • spread on toast

Tip: if you want a chutney, simply use chunky peanut butter. If you want a sauce, use smooth peanut butter instead.

Ingredients
 30 g coriander (1 good handful)
 1 medium lemon or lime
 3 green finger chillies
 2 tbsp soy sauce
 ½ cup chunky peanut butter for a chutney consistency or 1 cup smooth peanut butter for a smooth sauce
  cup water for chutney texture or up to 1/2 cup cut for smooth and drizzly consistency

Method

Chuck your coriander & peanut butter into a blender (I used my NutriBullet)

Juice your lemon straight in, using your hand to catch all the seeds

Add your soy sauce & 3 green finger chillies

4

Add water as per consistency required (1/3 cup for chutney texture or up to 1/2 cup for a smooth and drizzly consistency)
