Unbelievably delicious and incredibly quick & easy, this Green Shakshouka recipe is the perfect filling meal packed with green goodness. Shakshouka is traditionally a dish of eggs poaches in a mixture of chopped tomatoes, chillies, cumin, peppers and onions. For my Shakshouka, I decided to go a litte more green, using spinach, coriander and basil to make a green sauce in which to simmer my eggs.
This super simple recipe blends all the ingredients (apart from your eggs and cheese) in a NutriBullet to make the green sauce, so you don’t have to spend time laboriously chopping your ingredients.
This shakshouka is not only rich in greens, it’s also a good source of protein which is supplied by the eggs and buffalo mozzarella.

Blitz all the ingredients apart from the eggs and cheese in a NutriBullet (no chopping necessary)
Pour the mixture into three cast iron sizzler plates
Break two eggs into each plate and add mozzarella
Place in a pre-heated oven at 220C high heat for about 7-10 mins or until the sauce thickens and cheese starts to brown
