These vegan Green Waffles are delicious breakfast waffles made with spinach & oat flour so they are gluten-free & super healthy! The addition of egg is of course optional but it is great as a source of protein and B12. You can have the waffles without the eggs and splurge chocolate spread all over the waffles instead. They also go amazingly well with honey or maple syrup.
These waffles can be enjoyed either as savoury waffles or sweet ones entirely depending on what toppings you choose, so you can have breakfast both ways if you wish. These super simple vegan Green Waffles take only about 5 minutes to prepare – simply blend all your ingredients in a NutriBullet and let the waffle maker do the rest!
For these dairy free waffles, I used unsweetened almond milk from Alpro, however, you can also make your own completely sugar free almond milk with my homemade almond milk recipe which can be stored in the fridge for up to 2 days.

Heat up your waffle maker
Blitz all ingredients in a NutriBullet (don’t over blitz)
Grease your waffle maker plates with coconut oil
Pour out some batter and let cook until brown
You can place the waffles in the oven to keep warm (100C)
Optional: fry an egg or poach an egg to eat with your waffles
