Hiding veggies is not cheating; it’s being SMART!
As parents, our ultimate goal is to nourish our kids, and one clever way to do that is by sneaking in high phytonutrient vegetables like beetroot, spinach, and sweet potatoes into their meals. The options are endless! Incorporating these nutritious ingredients into familiar recipes makes it easier for kids to enjoy their meals without even realizing they’re getting a healthy boost. Below is my basic pancake recipe, which serves as the perfect canvas for adding your favorite hidden veggies. Let’s get cooking! ?

Blend all ingredients until smooth.
Heat butter or oil in a pan on medium-low heat.
Pour batter onto the pan.
When bubbles appear on the surface, flip the pancake.
Sauté mushrooms with garlic separately.
Place sautéed mushrooms on cooked pancakes, add cheese, and cover with a lid on low heat until the cheese melts.
Serve and enjoy!
