These Kale & Pea Cheesy Patties are quick and easy patties filled with great greens. This healthy and delicious lunchtime meal of kale and peas offers a unique take on the traditional patty. With an option to make this recipe vegan (by swapping out eggs for vegan eggs, and using vegan nutritional yeast instead of cheese), this dish is a delicious and suitable option for all.
These Kale & Pea Cheesy Patties are an easy and tasty way to get those greens into your diet. This super simple recipe blends steamed kale and peas together in a cheesy mix which is then hand-moulded into patty form. Kale is a great choice for a healthy diet because it is extremely nutrient dense: it contains important antioxidants like vitamin A and vitamin C, and a great source of vitamin K (which is important in for helping wounds heal properly).

Steam frozen peas and kale for 2-3mins
Into a food processor, add eggs (or vegan eggs), quartered onion, panko bread crumbs, grated cheese (or grated vegan cheese), lemon zest, cayenne pepper, parmesan (or Vegan nutritional yeast)
Once the kale has been steamed, pat dry to remove excess water
Add the pat-dried kale to food processor
Add peas to food processor
Blend
Add olive oil to pan
Using your hands, form the blended kale & peas into patties and fry
