Lettuce Enchiladas with Black Bean & Fresh Paneer Filling

Delicious, low carb lettuce enchiladas perfect for dinnertime. Filled with black beans and paneer, these lettuce enchiladas are tantalisingly tasty and packed with protein.

Swap your traditional tortilla wraps with lettuce leaves for something lighter, fresher and healthier! These lettuce wraps give your enchiladas an extra crunch. Load your enchiladas with a double helping of cheese, filling them with strips of paneer and topping it off with a grated cheese of your choice for some added cheesy goodness.

To give your black beans and paneer a delicious flavour, use a NutriBullet to blend together a tasty green paste made with coriander and spinach. These lettuce enchiladas use a wide range of spices like cumin & coriander powder, turmeric powder, cinnamon powder and garam masala to create a truly flavourful dish

Ingredients
For the Red Sauce
 1 tin organic chopped tomatoes
 1 tbsp olive oil
 1 tsp chopped garlic
 1 small chopped white onion
 1 tsp oregano
 ½ tsp nutmeg
 ½ tsp paprika or chilli powder if you dare
 Himalayan salt & black pepper to taste
For the Lettuce Filling
 300-500 g paneer roughly cut in stripsdepending on how cheesy you like it
 2 tins organic black beans, roughly 600 g (Mr Organic)
 handful coriander
 handful spinach
 ½ a medium sized red onion
 ½ inch piece of ginger with skin
 1 tsp cumin & coriander powder
 1 tsp turmeric powder
 1 tsp cinnamon powder
 1 tsp garam masala
 1-3 green ginger chillies if you dare
 1 tbsp olive oil
 ¼ cup water
 Himalayan salt & black pepper to taste
For the Wraps
 baby gem lettuce
Toppings (optional)
 grated cheese of your choice, vegan cheese or even grated paneer
 1 tbsp single cream

Method
1

Sauté the garlic and onions in olive oil until they start to brown, add chopped tomatoes and all spices and let simmer for 2 mins

Blend all the ingredients (no need to chop) in a NutriBullet except the paneer and the black beans

In a pan add the strips of paneer and let brown in a little olive oil

4

Add the green paste from the NutriBullet and the black beans. No need to cook for more than 2 mins

5

Spread half the sauce in a baking tray

6

Fill a baby gem lettuce with the paneer & black bean filling

7

Lay on the sauce and cover with another baby gem leaf

8

Pour the other half of the red sauce across the centre of the lettuce as well as single cream and cheese

9

Grill in the oven for 5 mins
