This Loaded Guacamole Sweet Potato Toast is the ultimate gluten-free, plant-forward twist on classic avocado toast. Peel a large sweet potato and slice into thick slices (about 5-6 per medium sweet potato), using a crinkle knife adds a nice touch.
Prepare your air fryer, put in the sliced sweet potatoes and oil spray.
Air fry for 10 mins in 260°C.
While waiting for the sweet potato, make your loaded guacamole in a bowl.
Cut your avocado in half, remove the stone and scoop them out with a spoon or using a glass.
Cut your lemon and limes in half and juice them over your avocados.
Mash with a fork.
Cut and dice your tomato, red onion & red and green peppers and add all your chopped veggies to the mashed avocados.
Add chopped garlic, cilantro, black pepper, salt (to taste) and mix well.
Put and spread the loaded guacamole on the sweet potato toast slices.
Top with crumbled feta and black sesame seeds or any seeds you like.
