Loaded Guacamole

Delicious and creamy loaded guacamole that makes the perfect side or dip. Great for those cosy movie nights in, or with your favourite take outs. Why not make some homemade guacamole and enjoy with your favourite nachos, pita bread, rice cakes, crackers or even veggie sticks.

I enjoyed mine with blue corn tortilla chips – a great way of incorporating those veggies into your snacks.

Choosing the Perfect Avocado

The key to choosing the right avocado is in the stem:

  • Not ripe: the stem doesn’t come off easily, it’s stuck well down onto the avocado
  • Perfectly ripe: the stem comes off easily and reveals a nice green colour on the surface which is an image of what’s going on inside
  • Too ripe: stem comes off easily and reveals a brownish/blackish colour, you avocado is bound to have brown spots inside as well

Serving Suggestions

This guacamole pairs well with so many snacks and fingerfoods. You can serve your creamy guacamole with my bitesized Baby Tacos or with my bun-less Vegan Black Bean & Beetroot Burgers (along with a fresh radish salad). Add this delicious loaded guacamole to make your snacks and meals that extra bit more tasty and green.

Ingredients
 2 avocados
 1 medium lemon
 2 limes
 1 tsp salt
 1 small red onion
  medium sized sweet pointed red pepper
  medium sized green pepper
 1 tomato
 1 tsp chopped garlic
 black pepper to taste

Method
1

Cut your avocados in half, remove the stone and scoop them out with a spoon or using a glass

Cut your lemon and limes in half and juice them over your avocadoes

Mash with a fork

Add salt and leave an avocado stone in the mashed avocado mixture

Cut and dice your red onion, red and green peppers

6

Cut your tomato into quarters and remove the seeds. Pat dry the excess juices and dice

7

Add all your chopped veggies to the mashed avocados

8

Add 1 tsp chopped garlic and mix well

9

Add black pepper to taste and mix again
