Mediterranean Pomegranate & Walnut Salad

This delicious Mediterranean Pomegranate & Walnut Salad is a quick salad fix bursting with flavour. With crunchy walnuts, sharpness from the pomegranate seeds and soft buffalo mozzarella cubes, this salad is perfectly balanced in taste and texture!

Salads are great for a quick, no-cooking-required fix up. The most you need to do is simply chop your ingredients when it comes to this Mediterranean Pomegranate & Walnut Salad. Mix together and add your dressing and you’re ready to serve a vibrant salad.

The mozzarella cubes are an excellent source of protein in this salad. If you want to make this salad vegan, you can leave out the mozzarella entirely or you could swap it out for vegan cheese or a good source of vegan protein (like beans or pulses). Ingredients
 90 g mixed salad leaves
 ½ cup cucumbers cut in round slices
 1 small red pepper cut in rings
 210 g buffalo mozzarella cut into cubes
 ½ cup walnuts
 100 g pomegranate seeds
 ½ cup pitted black olives
 1 small avocado cut into cubes
 1 tbsp olive oil
 1 tbsp balsamic vinegar
 1 tsp oregano
 salt & pepper to taste

Method
1

Prepare all your ingredients and cut your veggies

Prepare your salad dressing in a separate bowl: olive oil, balsamic vinegar, oregano, salt & pepper. Mix well

Mix the salt leaves, cucumber, peppers

4

Drizzle half the salad dressing and toss the leaves, cucumber & peppers

5

Place the rest of your ingredients over your bed of leaves

6

Drizzle the remaining dressing over your salad when you're about to serve
