One of my new favorites is this delicious Mexican Lasagna, and it’s quickly become a go-to recipe for my family. I love experimenting with new dishes on Sundays, and this one is a hit with the kids! With just 15 minutes of prep and 10 minutes in the oven, it couldn’t be easier. you can whip up a fun and satisfying meal that’s loaded with layers of cheese and flavorful fillings. Packed with the powerhouse nutrition of black beans and vibrant ingredients, this lasagna is officially my favorite way to enjoy this classic dish. Let’s dive into the recipe!

Spray some olive oil in a heated pan and add minced garlic and chopped onions, then sauté until softened.
Stir in the black beans, paprika, taco seasoning, and salt.
Add a little water to create a paste-like consistency.
Once mixed, add the corn and chopped peppers, and stir until well combined.
Spray some olive oil in a glass baking dish and place a layer of lasagna sheets at the bottom,
Spread a layer of your tomato sauce followed by the black bean filling and a generous amount of cheese.
Continue layering the lasagna sheets, tomato sauce, black bean mixture, and cheese until all ingredients are used.
Finish with a final layer of cheese on top and sprinkle with extra taco seasoning.
Place the lasagna in the oven and bake for 10 minutes.
Remove from the oven, let it cool slightly, then cut into portions and serve warm. Enjoy!
