A quick and delicious, crunchy meal packed with good greeness, these no-waste Pesto Cauliflower & Cheese Tacos use coriander stems to ensure all ingredients are used to their full capacity. You can even barbecue your cauliflower for that delicious BBQ taste!
These green tacos are veggie-packed, made with coriander stems, baby spinach leaves and cauliflower. Making the pesto sauce at home is a great way to control the flavour of your dish, as you can tailor the sauce to your own tastes. The pesto is quick and easy to make, simply blitz all your ingredients together.
This recipe is vegan-friendly; you can make it vegan by using vegan cheese instead of mozzarella to cut out the dairy. If you just can’t get enough of that cheesy goodness, you can use a liberal helping of grated cheese when you make your tacos – or if you don’t want to overpower the taste of the cauliflower, use less. As with most of my recipes, this Pesto Cauliflower & Cheese Tacos recipe is adaptable to different individual preferences, so everyone can make their tacos the way they like them.

Pre-heat your oven to 200C
Wash & cut your cauliflower into florets
Steam in a steam pan for 3mins
Whilst you wait to make your pesto - simply blitzing all the remaining ingredients into a sauce...
Line an oven tray with foil
Place your steamed cauliflower on the oven tray (test if ready by sticking a knife through one of the floret stems and it should poke through - be careful not to over steam otherwise the cauliflower will become a mush)
Place your taco shells in the oven as per instructions and meanwhile...
Coat your cauliflower in coriander & spinach pesto and top up with grated cheese

Turn oven to grill and grill for 5mins
Fill your shells and serve
Sauce up with a spicy sauce if you fancy
