A delicious combination of flavours, pistachio and lemongrass together with the cocoa make a delicious power bliss ball. For pure indulgence or energy boost, these Pistachio & Lemongrass Bliss Balls are the perfect burst of sweet and delicious energy.
This super simple recipe uses only five ingredients, including almond milk which makes these delicious treats vegan (however, you can also use your preferred milk, or even water if you wish). Blend all your ingredients in a food processor or NutriBullet and mould your bliss balls.
A super easy, kid friendly recipe to batch make, these Pistachio & Lemongrass Bliss Balls are perfect to enjoy as a healthy snack. Best stored in an airtight container, in the fridge, or alternatively they can also be frozen, so they’re also suitable for the lunchbox or on the go.

Soak your medjool dates in hot water for 10mins, to soften and easily pit. Place these in a food processor
Add cacao powder
Add 1 drop concentrate lemongrass extract
Add pre-ground pistachios in the food processor - I used 1 cup and left some aside to coat the balls
Add almond milk
Blitz everything
Form then roll the balls in ground pistachios. You can wet the balls with a dash of water if they feel dry and don’t grip the pistachios
Store in an airtight container in the fridge for about 1 week
