A healthy pizza alternative perfect for breakfast or brunch – this pizza omelette is great for a delicious Sunday meal. Cheesy goodness without skipping the veggies, this breakfast-lunch fusion recipe hits the spot.
You can use whatever toppings you wish to finish off your pizza omelette – I like to be as liberal as possible with my veggies and mushrooms!
Because this recipe is a breakfast-lunch fusion, if you have any left over from breakfast you can always keep it aside and finish it off for lunch. Alternatively, enjoy your pizza omelette as a filling and tasty brunch!

Into a bowl, crack 6 eggs and add 1 tsp salt
Add 1 tsp oregano and 1/2 cup grated mozzarella
Whisk
Oil a pan and heat it up
Add your eggs and reduce heat to minimum
Let cook and in the meanwhile prepare your toppings
Cover your omelette
Flip the omelette using a plate when the edges are cooked and cover again
When the omelette is finished cooking, add your tomato pizza sauce. Spread it all over
Sprinkle on top whatever veggies you like
Add grated mozzarella on top
Add oregano
Place under grill for 1-2 mins until the cheese melts & slightly browns
Serve hot
