The avocado in this puy lentil curry adds super good fats and makes it creamy delicious. I also added a bonus of “chevdo” which is a crunchy Indian savoury snack. You can add roast cashews or roast peanuts instead – that crunch makes all the difference.
Puy lentils have a delicious peppery flavour and are a good source of protein. For the most delicious puy lentil curry, I got my puy lentils from Merchant Gourmet. I also used Mr Organic Italian Organic Chopped Tomatoes which helped speed up the cooking process as my tomatoes were already pre-chopped!
This curry is packed with a rich variety of spices and flavours including turmeric powder, red chilli powder, garantir masala, curry leaves, cumin seeds and black mustard seeds, which all come together to give this dish an exciting and delicious taste.

Add oil to a pan and add the cumin and mustard seeds as well as curry leaves
Cover with a lid until you hear crackle-pop of the first seeds then add your garlic and onions
Brown these for 1 min then add the cooked puy lentils
Stir in and immediately add your powders
Stir and add water
Let cook for 2 mins and add your peppers
1 min later add chopped tomatoes and stir
Add salt and you’re done!
