Make your own Quinoa Choc-Nib Cookies with a super easy recipe using quinoa flour (or, if you prefer, any flour and coconut sugar or caster). This is a super fun recipe that the whole family can get involved in. Baking is a brilliant activity to get all the kids involved in, especially if it’s baking these chocolate nib cookies.
Baking isn’t only fun, it can also be a great way to perfect certain skills like:
- Measuring
- Weighing
- Counting
- Steadiness
- Hand control
- Engaging the senses, taste, smell, sight, touch
The most difficult part might just be letting the kids make a mess with sugar, flour and butter everywhere! These cookies were decoarted with chocolate chips, but you can really have fun with the decorating process and add whatever decorations you like.

Pre-heat oven stop 180C (160C fan oven)
Line a baking tray with grease proof paper
Mix the butter & sugar in a large bowl using a wooden spoon
Add the egg yolk or flaxseed egg and vanilla extract
Mix
Sift in the flour
Mix, you may need to use your hands
Use an ice cream scoop to scoop out equal balls of dough
Flatten with hands to shape cookies
Stick in chocolate bibs or decorate with whatever you like
Bake in the oven for 15mins
Cool down before eating
