10min Fluffy Oat Pancakes

Ingredients
¾ cup oat flour (or 1 cup rolled oats blended into flour)
 1 tsp baking soda
2 eggs (optional, but great for added protein)
Greek yogurt (or 1/4 cup if not using eggs)
1 small banana (for natural sweetness)
2 tbsp peanut butter (adds creaminess and flavor)
1 tsp cinnamon powder (for that warm, comforting spice)
 Pinch of salt
1 tbsp maple syrup or sugar (optional, for extra sweetness)
Honey (to drizzle over the top)
Method
1

In a blender, mix the oat flour, baking soda, eggs (if using), Greek yogurt, banana, peanut butter, cinnamon, salt, and maple syrup (if desired).

2

Blend until the mixture is smooth and well combined. The banana will provide natural sweetness while also helping to bind the ingredients together.

3

In a frying pan, melt a small amount of butter over medium-high heat. Once the pan is hot, it’s time to pour in the batter!

4

Pour small amounts of batter into the pan to form pancakes.

5

Cook until bubbles start to form all across the surface, then flip them over to cook the other side until golden brown.

6

Once cooked, stack your pancakes and drizzle with honey.

7

Feel free to add any fruits you love on top—berries, sliced bananas, or even a sprinkle of nuts for added crunch!
