Best Pancake Batter

Ingredients
 1 cup oat flour
 5 ½ cups plant milk (such as almond or oat milk)
 1 egg (or 1 tbsp chia seeds pre-soaked in 3 tbsp water to form a gooey ball as an egg substitute)
 ½ tsp baking powder
 ½ tsp cinnamon powder
 ½ tsp vanilla essence
 1 tsp maple syrup (or any sweetener of choice, optional but helps with the brown color)

Add all ingredients into a blender and blend on high until smooth and slightly thick.

Pour the pancake batter into a squeeze bottle for easier control while shaping the pancakes.

Heat a non-stick frying pan over medium heat.

Once hot, start by squeezing out a small round of batter for the head of the caterpillar.

Gradually make larger rounds as you work your way down, so it looks like a little caterpillar.

Add two small “antennas” on top of the head to complete the look.

Once bubbles start forming on the top and the edges look firm, carefully flip each pancake.

Cook the other side for another 1-2 minutes until golden brown and cooked through.

Serve your pancakes with your favorite toppings like fresh fruit, syrup, or a sprinkle of powdered sugar, and enjoy every delicious bite.
