Gluten-Free Protein Mini Pizzas

Ingredients
 2 large eggs
 1 tin organic chickpeas (230g)
 A pinch of salt
Toppings:
 Pizza sauce
 Preferred cheese (I’m using protein cheeses)
 Fresh chopped vegetables (such as bell peppers, mushrooms, onions)
 Dried oregano
Method

Preheat the oven to 180°C to get it ready for baking.

Drain the chickpeas and pat dry them with kitchen paper to remove excess moisture.

In a food processor add the eggs, dried chickpeas, and a pinch of salt.

Blend until smooth (1-2min) pushing down any lumps from the sides.

Line some pizza trays or a baking tray with greased baking paper.

Spoon the mixture onto baking paper and shape it into mini pizza bases.

Bake the bases for 10-15min or until cooked through

Meanwhile prepare your toppings and your sauce.

 Layer the bases with sauce, preferred toppings and cheese, sprinkling oregano over the top.

Bake a further few minutes under the grill to melt the cheese.

Enjoy it hot or let cool down on a cooling rack before packing into the lunch box.
