Halloumi Fritters

Ingredients
 225 g grated halloumi
 2 medium sized grated carrots
 2 small grated courgettes
 ½ cup bread crumbs
 3 eggs
 ½ tsp black pepper
 1 tsp smoked paprika
 ¼ tsp chilli powder
 1 tbsp finely chopped spring onions
 1 tbsp coconut oil

Grate the carrots, halloumi & courgettes

In a bowl mix all the ingredients except the grated courgettes. squeeze the water out of these before mixing with the remaining ingredients.

Form your patties, squeeze them tight between your hands to remove excess water or add more breadcrumbs to absorb the wetness

In a pan heat 1 tbsp coconut oil

Place your fritters on the hot oiled pan and let brown on both sides

Serve with any sauce you like, a poached egg or salad
