Kale & Pea Cheesy Patties

Ingredients
 1 cup frozen peas
 2 cups kale (150g)
 2 eggs or vegan eggs
 1 medium white onion
 1 cup panko breadcrumbs
 1 cup grated cheese (or grated vegan cheese)
 1 lemon zest
 ½ tsp cayenne pepper
 2 tbsp Parmesan or vegan nutritional yeast
 2 tbsp olive oil
Method
1

Steam frozen peas and kale for 2-3mins

Into a food processor, add eggs (or vegan eggs), quartered onion, panko bread crumbs, grated cheese (or grated vegan cheese), lemon zest, cayenne pepper, parmesan (or Vegan nutritional yeast)

Once the kale has been steamed, pat dry to remove excess water

Add the pat-dried kale to food processor

Add peas to food processor

Blend

Add olive oil to pan

Using your hands, form the blended kale & peas into patties and fry
