Mexican Lasagna

Ingredients
 2 cans drained black beans
 ½ medium sized red onions chopped
 2 tbsp minced garlic
 2 tsp paprika powder
 ½ taco mix seasoning (extra sprinkle on the top)
 ¼ salt
 1 cup sweetcorn
 1 cup chopped peppers (I’m using yellow & orange)
 400 g grated cheese (I’m using a mix between protein cheese & grated mozzarella)
 250 g homemade tomato sauce
 250 g lasagna sheets 1 pack
 2 tbsp olive oil
Method

Spray some olive oil in a heated pan and add minced garlic and chopped onions, then sauté until softened.

Stir in the black beans, paprika, taco seasoning, and salt.

Add a little water to create a paste-like consistency.

Once mixed, add the corn and chopped peppers, and stir until well combined.

Spray some olive oil in a glass baking dish and place a layer of lasagna sheets at the bottom,

Spread a layer of your tomato sauce followed by the black bean filling and a generous amount of cheese.

Continue layering the lasagna sheets, tomato sauce, black bean mixture, and cheese until all ingredients are used.

Finish with a final layer of cheese on top and sprinkle with extra taco seasoning.

Place the lasagna in the oven and bake for 10 minutes.

Remove from the oven, let it cool slightly, then cut into portions and serve warm. Enjoy!
