 8 purple sweet potatoes
 650 ml vegan cheesy sauce
 fresh coriander for garnish

Wash your potatoes

To make your potatoes hasselback potatoes, cut into your potatoes using a wooden spoon (or a chopstick) as a guide. Place it next to your potato as you cut, so it prevents the knife from cutting all the way through

Wrap your hasselback potatoes in kitchen roll. This helps the potatoes retain moisture and cook quickly

Heat your wrapped potatoes in the microwave for 5-6 mins

Prepare your vegan cheesy sauce whilst the potatoes steam in the microwave

Place your steamed sweet potatoes into a baking dish & pour the vegan cheesy sauce all over. Use as much sauce as you can to cover your potatoes

In an oven preheated 200C, put your potatoes on high grill

Sprinkle coriander over the top & serve
