Ingredients
250 g cooked puy lentils (or Merchant Gourmet pack)
½ green pepper cut into cubes
½ red pepper cut into cubes
½ tin chopped tomatoes (Mr Organic)
½ tsp chopped garlic
½ white onion chopped
1 tbsp rapeseed oil (or preferred oil)
½ tsp cumin seeds
½ tsp black mustard seeds
4-5 curry leaves
½ tsp turmeric powder
½ tsp red chilli powder (can leave out for kids)
½ tsp garantir masala (don't worry if you don't have any, add 1/2 cinnamon powder instead)
1 cup water
1 tsp Himalayan salt or to taste
Method
1 Add oil to a pan and add the cumin and mustard seeds as well as curry leaves
2 Cover with a lid until you hear crackle-pop of the first seeds then add your garlic and onions
3 Brown these for 1 min then add the cooked puy lentils
4 Stir in and immediately add your powders
6 Let cook for 2 mins and add your peppers
7 1 min later add chopped tomatoes and stir
8 Add salt and you’re done!
