
Quick and protein filled, these stuffed courgette boats are rich, green and filling - and all vegan! For a great source of vegan protein, this recipe is the perfect fit.
Preheat oven 200C
Slice courgette into halves lengthwise
Scoop out centre pulp to make courgette boats & chop up scooped pulp
Place courgette boats in the oven brushing some olive oil under and over them (1 tbsp or spray)
In a pan or wok, fry the garlic & onions in 1 tbsp olive oil for 1-2 mins
Add the quorn and chopped courgette and stir on high heat
Add seasoning and coriander (& chillies if you like spice)
Remove the boats from the oven and fill with the cooked quorn
Top up with vegan cheese or preferred cheese
Switch the oven to grill and grill for a few minutes
Serve hot
