Ingredients
220 g roughly half a pack soft tofu I used organic silken tofu from Taifun Tofu
a few sprays of avocado oil I used Frylight oil
1 tbsp chopped red peppers
1 tbsp chopped red onions
½ tsp chopped garlic
pinch of red chilli powder
salt to taste black salt gives it an eggy flavour
½ tsp turmeric powder
chopped green chillies for garnish
coriander
Method
1 Spray some oil on a frying pan
2 Fry garlic, peppers & onions for 1min
3 Add turmeric & fry for 1min
4 Add tofu and scramble into the pan and veggies with a wooden stick
5 Add chilli powder (optional) & salt
6 Toast your bread if you wish to have toast
7 Sprinkle chopped green chillies and coriander over your scrambled tofu eggs
