Ingredients
220 g roughly half a pack soft tofuI used organic silken tofu from Taifun Tofu
a few sprays of avocado oilI used Frylight oil
1 tbsp chopped red peppers
1 tbsp chopped red onions
½ tsp chopped garlic
pinch of red chilli powder
salt to taste black salt gives it an eggy flavour
½ tsp turmeric powder
chopped green chillies for garnish
coriander
Method
1Spray some oil on a frying pan
2Fry garlic, peppers & onions for 1min
3Add turmeric & fry for 1min
4Add tofu and scramble into the pan and veggies with a wooden stick
5Add chilli powder (optional) & salt
6Toast your bread if you wish to have toast
7Sprinkle chopped green chillies and coriander over your scrambled tofu eggs
