
Heat up your coconut oil in a pan
Add your chopped garlic & red onions. Mix together
Add and mix in your chickpeas
Add the spinach leaves & mix
Throw in your chopped aubergine, peppers & courgette
Mix well
Season with salt & pepper
Let cook for 2 mins then add your tomato purée
Add your cooked quinoa & mix
Sprinkle your chilli flakes on top
Transfer to a bowl then garnish with coriander, pomegranate & almond flakes
Enjoy hot or cold!
