Heat the ghee (or olive oil) in a pressure cooker over medium heat.
Add the cumin and coriander seeds, and sauté for about 1-2 minutes until fragrant.
Add the chopped onion and cook until softened and golden brown.
Stir in the turmeric powder and garam masala, cooking for an additional 30 seconds to release the flavors.
Add the washed quinoa, edamame beans, and cooked beetroot.
Stir everything together, making sure the quinoa is coated with the spices.
Pour in 2 cups of water and add salt to taste.
Close the pressure cooker lid and cook for 3-4 whistles or for about 12-15 minutes, depending on your pressure cooker.
