Spinach Pesto

This incredibly quick and super easy recipe makes a delicious spinach pesto in just 5 minutes! Simply blend all your ingredients in a NutriBullet and your pesto is done. Perfect for your pasta, spaghetti, courgetti, and sandwich recipes (to name a few), this pesto is great to have in your fridge whatever the occasion.

 2 cups raw spinach
 2 handfuls cashew nuts
 1 cup basil leaves
 3 tbsp nutritional yeast
 ½ cup olive oil
 1 tsp garlic
 ½ cup water
 salt & pepper to taste

Method

Blitz all your ingredients in a NutriBullet - and your spinach pesto is done!

I like to add green chillies to mine and mix it into delicious spelt or wholewheat pasta with a few roast mushrooms on the top

You can store your spinach pesto in the fridge for up to a week
