
Getting into the spirit of Halloween, this spooky bolognese is frightfully delicious! Quick, easy and fun, this recipe uses black bean noodles for a healthier alternative to regular spaghetti.
Boil the black bean pasta for 6-8mins or as indicated on the package
In a food processor chuck in the cauliflower florettes, celery cut in sticks, chunky cut carrots
In a pan, heat the olive oil then add the garlic and chopped onion
Let brown for a few minutes then add the veggie mince. Keep on high heat to burn off any water
Add salt, pepper, basil
After 2-3mins add the chopped tomatoes
Stir and add the passata for more redness
Serve hot or cold. Add vegan cheese or parmesan and olive eyeballs for effect
