With tender lentils simmered in a rich tomato sauce and tossed with perfectly cooked penne, this one-pan wonder brings comfort to the table in under 15 minutes. It’s a go-to for anyone who wants a quick, healthy, and satisfying meal that tastes like it’s been slow-cooked all day.

Bring about 1L of water to a boil. Adding 1tspn salt makes the process quicker
Cook the penne in boiling water as per package instructions. Fresh penne takes about 4minutes.
Heat the olive oil in a deep pan for 1-2min then fry the onions for 1min or until translucent.
Add the minced garlic and saute for a further minute.
Add the chopped veggies, saute for 2mins.
Add the drained and rinsed tinned lentils and then crumble in the stock cube mixing everything in together.
I always have red sauce or my pizza sauce (15min Mom Pizza sauce) handy or in the freezer - add this to the lentil-veggie mix.
Let the sauce heat through properly before adding the cooked penne. At this point turn the heat off and mix everything well.
Enjoy hot or keep in the fridge for up to 3 days. You can serve with sprinkles of Parmesan or any cheese.
